I'm really interested to know if anyone has tried canning homemade mayonnaisse. I've come across some info saying that using traditional canning techniques might make the mayo separate and could pose safety risks because of the raw eggs in it. I've also heard about fermenting with whey to help it last longer in the fridge, but I'd love to hear any personal experiences or differen methods people have tried

Honestly, I haven't really heard of any reliable methods for canning homemade mayo.
You have to be cautious because you're using raw eggs, increasing the risk of botulism!

Mayo isn't safe for canning. I think this one might require you to jar. Kinda scary, don't you think? Botulism is ew.
