Canned poached eggs?

I'm getting meals ready for a week-long camping trip with my brother and niece, and we're trying not to bring a cooler. I thought it would be great to have some easy protein like poached eggs in jars. Kind of like those egg cups you get at coffee shops. But I'm stuck on how to make them safe to store without messing up the safety. Has anyone tried this or found a good way to do it?
 
Great idea but unfortunately, when it comes to canning, eggs are a tricky one because they are a low-acid food. This means they can be a breeding ground for botulism spores if not processed correctly. The only safe way to can a low-acid food like eggs is with a pressure canner, not a water bath canner. But honestly, even with a pressure canner, you can't be sure if they are safe because the processing time and pressure needed to kill botulism spores in eggs hasn't been scientifically determined for home canning. Maybe it's better to consider canning a different protein like chicken or beef?
