how to canning the nopales cactus

I'm starting to learn to canned food recently, after I saw a few YT vids

It's cool to be able to do canning on our own

I want to can nopales cactus pads, I'm curious how to do this correctly.
Can I water bath canned? Is it okay to add vinegar, bcs I think they're not acidic enough, right?

What else should I add, and how do I do it right?
I'm open to any advice, TIA!

For nopales, you definitely can't water bath can them on their own.
They're a low-acid food, which means you'll need to use a pressure canner to safely preserve them.
You can find tested recipes from reliable sources like the National Center for Home Food Preservation.

I haven't tried making one but I agree with @jerick_s, a pressure canner is the way to go because of the low acidity level of nopales!
 
A while back I read somewhere that low acid foods can be canned without a pressure canner. If I remember correctly you're supposed to cook the food, freeze it and then ferment it. Haven't tried, it, not sure if it works, so I'm just the messenger. Maybe someone can say if they tried this.
 
Nopales aren't acidic enough on their own for safe water bath canning, so you'll definitely need vinegar to bring the pH down. Slice the pads, blanch them briefly, then pack them in jars with a vinegar water-salt solution. You can also add garlic, onions, or chili for flavor
