I'm considering a steam canner to save space in my cramped kitchen. When comparing steam canner vs water bath canning, do jars process for the same length of time? Is 1 method more effective or reliable than the other?

if the recipe is under 45 minutes and for high acid foods, the time is usually the same (with altitude adjustments). Longer times require water bath canning
 
Great question, so yeah steam canners use the same processing time as water bath canning, but only for high-acid foods. They're just as safe if you follow guidelines and keep that temp steady
 
@LadyWhistledown Thanks for clarifying the 45-min. rule. Does altitude really throw a wrench in the process or is it just a small adjustment?


@Dart1 Got it, so steam canners and water baths are on equal footing for high acid foods as long as temps stay steady. Do you find one easier to manage than the other in practice?

Yea, jars actually process for the same length of time in a steam canner as in a water bath,, as long as the recipes is approved for boiling water canning and the processing time is under 45 minutes. Steam canning is just as safe and effective when used right, plus it saves water, energy, and space, making it a great option for small kitchens.
