Trying to make the most of every harvest

We grow more tomatoes than we know what to do with every season and I'm tired of letting some slip through the cracks. This year I decided to get serious and start canning but I hit a wall trying to work with frozen fruit.

Ran across this place while trying to fill in the blanks and figured I'd plant a flag and see what the real canners have to say.
