Will this stock pot work for water bath canning?

I'm in the research phase of starting to can, inspired by my grandma who always canned homegrown fruit and veggies. I'm starting with water bath canning, as pressure canning will require more investment. Can you use a stock pot for canning? Would this 15.3L (16 qt) stock pot work for water bath canning? It's 10 inches tall and 12 inches in diameter. I'd also get a rack for the base, but just want to be sure it's deep enough

This sounds great! 15.3L stock pot with the dimensions you mentioned seems like a perfect option for water bath canning, especially with a rack. You should be able to process a good number of jars in it. Have fun!
 
Yep, that'll do the trick for most thing and remember your jars should have about an inch or two of water over the top and there's room for it to boil gently, you're good.
