I've been digging through safe canning sites and this forum and I'm wondering can I make marinara sauce using canned tomatoes like Cento and pressure can it safely? I don't grow my own, and store-bought sauces are just way too sweet for my taste...I am really hoping someone's got a tested, safe recipe for canning marinara with canned tomatoes

Yes, you can definitely pressure can marinara made from canned tomatoes. Just be sure to add the proper amount of citric acid to balance the acidity and leave enough headspace in the jars. That should keep it safe and prevent any issues during storage.

You can pressure can store-bought, (fresh or already canned), or home-grown tomatoes. At 15lbs pressure, the canner temp reaches 257 F which will kill botulinum bacteria.

Yeah, you can make marinara with canned tomatoes. There's no rule about that. Just make sure you're not tossing in a ton of low acid stuff or meat unless you're pressure canning. Cento's pretty good.
