I've been searching for tested pressure canning recipes that include lentils but haven't had any luck so far. I'm prefer USDA- or extension-approved recipes specifically for lentils. Drop the links if you got one. Please point me in the right direction.

Yeah there are currently no USDA- or extension-approved pressure canning recipes made specifically for plain lentils. The USDA does have tested guidelines for dried beans and peas, but lentils aren't listed. I think it's best to follow only approved recipes or check with your local extension office for updates.

I take lentils (and all dry beans) and put them in canning jars with a dessicant pack to keep moisture out, and vacuum seal a lid on. They stay air/moisture free on the shelf until I need them.

I've only canned one quart of lentils. It was 200 grams in a reused Costco Avocado oil mayonnaise jar. Regular lids and bands fit those jars. Also they hold 2 fl.oz. more than a standard ball jar.
Anyways those lentils expanded up to the lid and soaked up all the water. It sealed and we ate it immediately. Next time I might just experiment with less lentils. Haven't been impressed with split peas also. But we have a navy or pinto recipe that os great and we haven't had no problems with it.
