Canning tomatoes with skin and seeds

I'm new to canning so I'm just really lurking through forums. but i'm curious if you have tried to canning tomatoes with its skin and seeds on? how long can it last?

Won't it taste bitter too if you do that?

Yeah, you can leave the skins and seeds on. It's safe if you process it right though it might get a little bitter over time though so its probably best used within a year.

Sure! I've definitely canned tomatoes with the skins and seeds. The texture ends up being a bit chunkier, but there's no noticeable bitterness. They'll last about 12 to 18 months if you store them properly. I typically only peel them when I'm making sauce.

Personally, I wouldn't really recommend it and it's also because of what they mentioned here.
It's technically possible but leaving the skins can make tomatoes tough.
The one I've tried where the seeds were included had a slightly bitter taste.
Peeling and de-seeding tomatoes before canning are just the best practice for me to get that best quality and flavor!
When done that way, it can last a year or even longer when stored in a cool, dark place.
