making homemade tomato soup

I am looking for help with making and canning homemade tomato bisque soup. ours is thin and acidic. any help would be appreciated
 
I've been chasing the perfect bisque for years, it's tricky. A bit of baking soda can cut the acidity, and roasting the tomatoes first deepens the flavor, then to give it thickness, I blend in cooked rice or a little roux before canning, pressure can tho since dairy is not shelf safe otherwise.
 
Thickening soups can be accomplished with roux, instant mashed potato flakes, or a tiny pinch of xanthan gum. I generally start with butter, onion/celery and saute until they are soft. I then add flour and mix until it thickens. add tomatoes and other ingredients and blend until smooth.
 
i finally found a tomato soup recipe that my wife likes, how can I tell if is ok to can it?

I pressure-can tomato soup for 20minutes. I leave out the milk ingredient (I use half and half) and I use quart jars. This gives 2 servings of soup when opened, and I add my half and half before warming it up.
 
thank you for the response. no dairy in this recipe except for a T of butter. is that too much? I like the idea of using quart jars
 
The butter is fine. I always like milk/cream in my tomato soup to make it creamy and less acidic. I just add it before serving it.
