My partner and I eat different kinds of rice, and I'm trying to meal prep more efficiently. I was wondering if there's a safe method to preserve cooked rice in jars, maybe by pressure canning? I've heard mixed things and don't want to risk doing something unsafe.

Sadly, pressure canning cooked rice isn't really a safe thing to do. All that starch makes it tough for heat to get through properly, which could lead to Bacillus cereus growing, yikes! The best idea is to simply cook your rice and then freeze it in portions. That's actually what I do at home for my mixed rice. By the way what kinds of rice are you prepping?

Great advice all around! I experienced something similar a while back. My wife is a big fan of sticky jasmine rice, while I prefer basmati, so we started batch cooking both and experimenting with different ways to store them. We eventually decided to freeze them in flat zip-top bags, clearly labeled by type and date. It's super convenient to reheat them in the microwave or steamer. I wouldn't recommend canning rice either. By the way, what kinds of rice are you working with these days?
